How to Cook African Yam: Traditional & Modern Recipes

  • Ingredients: 1 kg boiled yam, water, salt
  • Method: Drain boiled yam and transfer to a mortar or high-speed blender. Gradually pound or blend, adding water sparingly, until you achieve a smooth, stretchy dough. Season with a pinch of salt. Serve hot with egusi, ogbono, or vegetable soup.

2. Crispy Yam Fries

  • Ingredients: 500 g yam, olive oil, smoked paprika, salt, pepper
  • Method: Peel and cut yam into 1 cm sticks. Parboil for 5 min, then drain and pat dry. Toss with olive oil and spices, spread on a baking sheet, and roast at 220 °C for 25 min, flipping halfway. Enjoy with a zesty dipping sauce.

3. Spiced Yam Porridge (Asaro)

  • Ingredients: 1 kg yam cubes, palm oil, onions, bell peppers, crayfish, seasoning
  • Method: Sauté onions and peppers in palm oil, add yam and just enough water to cover. Stir in crayfish and seasoning. Simmer until yam softens and the liquid thickens into a creamy porridge. Garnish with fresh basil.
